Ingredient:
6 Toneli Free Range eggs
100 g sliced mushrooms in brine
200 g sweet cheese
150 g flour
100 g butter
100 ml milk
1 onion or 1 bunch green onion
Salt pepper
1 bunch green parsley
Grated cheese and butter for decoration
Method of preparation:
Melt the butter in a saucepan, add the flour and mix vigorously, then gradually pour the milk. In the obtained sauce, add 4 egg yolks rubbed with a little salt, and at the end add the beaten egg whites.
Pour the composition into an even layer, in a tray of about 15 × 25 cm, lined with baking paper and bake in a preheated oven over medium heat for 20-25 minutes.
Finely chop the mushrooms and greens, add the remaining eggs, beaten with sweet cheese, salt and pepper to taste.
Turn the baked sheet over on a damp napkin, remove the baking paper and roll the top with the napkin. After 5 minutes, roll out, spread the mixture with cheese, mushrooms and greens and roll again. Put the roll in a tray and put it back in the oven for 10 minutes.
Remove the roll on a plate and slice. It can be served hot and cold.
